It's harvest time on my
tomato balcony and I have many juicy beauties, each with different tastes, consistencies and even colours! I wanted to combine all these flavours, so I chopped up a few of each tomato into a glass bottle along with some olive oil, balsamic vinegar, pecorino cheese, garlic, rosemary, basil, oregano and fennel - all from either my garden or the farmers market. This great mixture can be poured over leaf lettuce, other vegetables, rice, couscous, or pasta for a variety of quick "slow food" on the go options!
